Mac and Cheese recipe

So, I completely forgot about the recipe.....until reminded. So here it is from the Ratatouille What's Cooking cookbook for kids.

1 lb elbow macaroni, cooked according to directions
Butter for greasing the dish
3 cups half-and-half or whole milk (I've used 2% with no real problems)
18 slices of American or cheddar cheese
12 Ritz crackers
Salt, pepper, and paprika to taste

1. Heat the oven to 350 and grease a 13x9 baking pan or large casserole dish
2. Spoon a third of the cooked macaroni into te pan, then pour in 1 cup of the half and half or milk and cover with 6 slices of cheese. Add two more layers of pasta, half and half or milk, and cheese.
3. Place the crackers in a ziplock bag and crush. Add the salt, pepper and paprika, then sprinkle the crumbs on top of the pasta and cheese. Bake until bubbly, about 35 to 45 minutes.

Now for my additions. I put salt and pepper on top of every cheese layer, but the last. I do two layers of American cheese, with a layer of cheddar in the middle. I also put tiny pieces of butter all over the top, makes the crackers yummier. And I use a few more crackers than called for. Oh, and you really have to cook it 45 min. It has to be very bubbly to get all the milk and cheese mixed. Also, put a cookie sheet under it because it spills over.

YAY I am so excited your the best Chris! I was just telling Amy about this tonight when we were eating kraft at her house. We LOVE the mac and cheese from Luby's ever since we were kids and had to go there with MawMaw :)

I made this again last night, and i have to say when you take it out of the oven it doesn't look great. You can still see the cheese and milk, but let it sit for 5-10 min and then when you start spooning it out it all runs together, and its so yummy! And it has all the runny cheese sauce like Luby's. Make it the same night you have broccoli and you have enough cheese sauce for the broccoli!
